You can learn many different fighting moves and different fighting styles if you know where to go. You need to head around the city and find one of the Gyms. The game spawns these all over the city. You can learn three fighting styles in the game: Boxing, Karate, and Kickboxing.
To actually get into the ring with them, you need to improve your Muscle. Make sure to eat well and keep on the weights in the Gyms to build up that stat. As you build more muscle, you can take on more trainers. Head inside and find the Trainers around the gym. They will often be found in the boxing area nearby to a heavy bag.
Get into the ring with the Trainer in each of the three Gyms and then beat them in a melee fight. It might take a bit of work as they are pretty tough. If you want to make fights much easier, you can use the San Andreas Cheats, of course.
