How do Honey Trees work
The basic premise is that you apply this honey to trees found around the game world, and then come back a short while later. You will then find a Pokémon encounter waiting for you at the tree. You just need a unit of Honey in your inventory, then you need to interact with the golden tree to apply it.
You’ll first receive Honey in Pokémon Brilliant Diamond and Shining Pearl after rescuing the old man NPC by defeating two Galactic Grunts in Floaroma Meadow. There are also a few Honey Trees there you can immediately cover in honey. Come back in a few hours to see if you got anything.
The species of Pokémon found via Honey Trees in Pokémon Brilliant Diamond and Shining Pearl will depend on the time in which you apply the honey. The level, IVs and other elements are determined when the encounter spawns, not when you cover the tree. And since that’s the case, resetting the game won’t change which Pokémon is encountered. You need to return after no more than 24 hours. And no, the Honey Tree’s timer cannot be tricked using the date skip method.

There are 21 Honey Trees throughout the Sinnoh region in Pokémon Diamond, Pearl, and Platinum. And it’s very likely that most of them have been replicated in the Switch version. Here are all the locations you can find these golden beauties:
